Baby Potatoes Salad
A delicious and easy-to-make baby potatoes salad with a tangy balsamic Dijon dressing and the freshness of cherry tomatoes and parsley. Perfect for a light and satisfying meal.
Ingredients:
- 500g baby potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons Dijon mustard
- 1/4 cup feta cheese, crumbled
- Mixed greens for serving
Instructions:
Boil baby potatoes until fork-tender, about 15 minutes
Drain and let cool, then cut in half
In a bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper
Add potatoes, cherry tomatoes, red onion, and parsley to the bowl and toss to coat with the dressing
Top with crumbled feta cheese
Serve the salad over a bed of mixed greens
