Roast Chicken with Rhubarb Butter and Asparagus

This roast chicken recipe features a unique twist with rhubarb butter, adding a tangy and sweet flavor to the succulent chicken. Paired with tender roasted asparagus, its a delightful springtime meal thats easy to prepare and sure to impress.

Ingredients:

  • 1 whole chicken
  • 1 bunch of asparagus
  • 1 cup rhubarb, chopped
  • 1/2 cup unsalted butter, softened
  • Salt and pepper to taste

Instructions:

Warm the oven up to 190C 375F

Put salt and pepper on the chicken all over

Put the softened butter and chopped rhubarb in a small bowl and mix them together well

Take care to loosen the chickens skin, and then spread the rhubarb butter under it

Put the chicken in a roasting pan so that the breast side is facing up

Arrange the asparagus in the pan around the chicken

Put the chicken and asparagus in an oven that has already been heated up

Roast for about an hour, or until the chicken is golden brown and cooked all the way through

Take it out of the oven and let it cool down for a few minutes before cutting it

Put the asparagus and rhubarb butter on a plate with the roast chicken
