Black Bean Portobello Mushroom Veggie Burger

Black Bean Portobello Mushroom Veggie Burgers are a tasty and healthy way to eat a burger without meat. Theyre great for a vegetarian barbecue or a weeknight dinner because theyre full of black beans, mushrooms, and tasty spices.

Ingredients:

  • 1 can 15 oz black beans, drained and rinsed
  • 2 large portobello mushrooms, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup grated carrot
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper optional
  • 4 whole wheat burger buns
  • Lettuce, tomato, avocado, and other toppings of your choice
  • Olive oil for cooking

Instructions:

Use a fork or potato masher to mash the black beans in a large bowl until they are mostly smooth

While the beans are being mashed, add the breadcrumbs, red onion, cilantro, grated carrot, ground cumin, chili powder, salt, black pepper, and cayenne pepper if using

Mix everything together well

Make 4 equal portions of the mixture and shape each one into a patty

Brush olive oil on a skillet or grill pan and heat it over medium-high heat

The veggie burger patties should be cooked for four to five minutes on each side, or until they are hot all the way through and have a nice char on the outside

In a skillet, toast the whole wheat burger buns until they get a little brown

You can put a veggie patty on the bottom half of each bun and then add your favorite toppings, like lettuce, tomato, avocado, and more

Put the other half of the bun on top and serve hot
