Savory Slow Cooker Chicken Stew
For busy moms, this tasty chicken stew made in a slow cooker is the perfect comfort food. You can put the food in the slow cooker in the morning and have a hearty, tasty dinner ready when you get home.
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 medium potatoes, peeled and diced
- 2 cups baby carrots
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can 14
- 5 oz diced tomatoes
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons cornstarch optional, for thickening
Instructions:
Place chicken breasts in the bottom of the slow cooker
Add potatoes, carrots, onion, and garlic on top of the chicken
Pour diced tomatoes and chicken broth over the ingredients
Sprinkle with thyme, rosemary, salt, and pepper
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and vegetables are tender
Optional: If desired, mix cornstarch with a small amount of water to create a slurry
Stir the slurry into the stew during the last 30 minutes of cooking to thicken the sauce
Serve hot and enjoy
