Avocado Hummus

You can make this Avocado Hummus dip, which is creamy and full of flavor. It has the richness of avocado, the nuttiness of tahini, and the earthiness of chickpeas. Its great as a snack or as an appetizer at a party.

Ingredients:

  • 1 ripe avocado
  • 1 15-ounce can chickpeas, drained and rinsed
  • 3 tablespoons tahini
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, red pepper flakes, sesame seeds

Instructions:

In a food processor, combine avocado, chickpeas, tahini, garlic, lemon juice, olive oil, salt, and pepper

Blend until smooth and creamy, scraping down the sides as needed

Taste and adjust seasoning as desired

Transfer the hummus to a serving bowl

If desired, top with chopped cilantro, red pepper flakes, and sesame seeds

Serve with pita bread, chips, or fresh vegetables for dipping
