Fall and Halloween Cupcakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup canned pumpkin puree
- Orange food coloring optional
- For the frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2-3 tbsp milk
- 1/2 tsp vanilla extract
- Green and black gel food coloring
Instructions:
Warm up your oven to 350F 175C and put Halloween-themed cupcake liners in a cupcake pan
Mix the flour, baking soda, baking powder, salt, and spices cinnamon, nutmeg, and cloves in a bowl with a whisk
Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
Add the vanilla extract and mix well
Starting with the dry ingredients and ending with the buttermilk, add them one after the other
Dont mix any further than that
Add the pumpkin puree and mix it in
If you want a bright orange color, you can add orange food coloring
Fill each cupcake liner about two thirds of the way to the top with batter
Its done when a toothpick stuck in the middle of a cupcake comes out clean after 18 to 20 minutes of baking
After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down
To make the frosting, soften the butter and beat it until its smooth
Then, add the powdered sugar, milk, and vanilla extract one tablespoon at a time until the frosting is smooth
Separate the frosting into two parts
One part should be green for the pumpkin stem, and the other should be black for scary decorations
Pipe the green frosting onto each cupcake to make it look like the stem of a pumpkin
With the black frosting, make decorations for Halloween
Add more Halloween-themed sprinkles or any other edible decorations you like
