Instant Pot Potato Soup
A creamy and comforting potato soup made effortlessly in the Instant Pot, perfect for chilly days or a quick meal.
Ingredients:
- 4 cups diced potatoes
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- Salt and pepper to taste
- Chopped chives or green onions for garnish
Instructions:
In the Instant Pot, add the diced potatoes, onion, garlic, and broth
Close the lid and turn the valve so that it seals
Leave it to cook for 8 minutes on high pressure
When youre done, quickly let go of the pressure
Put the lid back on and mix in the sour cream, milk, and shreds of cheese
Add pepper and salt to taste
Blend the soup until its smooth with an immersion blender
Add chopped chives or green onions on top and serve hot
