Quinoa Salad with Cucumber, Feta, and Fried Egg

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 4 large eggs
  • 2 tablespoons olive oil

Instructions:

Rinse the quinoa thoroughly under cold water

In a medium saucepan, bring 2 cups of water to a boil
