Quinoa Salad with Cucumber, Feta, and Fried Egg
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1/2 cup crumbled feta cheese
- 4 large eggs
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Rinse the quinoa thoroughly under cold water
In a medium saucepan, bring 2 cups of water to a boil
Add the rinsed quinoa to the boiling water and reduce heat to a simmer
Cover and cook for about 15 minutes, or until the quinoa is tender and the water is absorbed
While the quinoa is cooking, heat 2 tablespoons of olive oil in a skillet over medium-high heat
Crack the eggs into the skillet and fry them to your desired level of doneness usually about 2-3 minutes for sunny-side up
Season with salt and pepper
Once the quinoa is cooked, fluff it with a fork and transfer it to a large salad bowl
Add the diced cucumber and crumbled feta cheese to the quinoa
Toss to combine
Divide the quinoa salad into serving bowls
Place a fried egg on top of each serving
Garnish with fresh parsley and an extra sprinkle of feta cheese if desired
Serve immediately and enjoy
