Shredded Vegetable and Soba Noodle Salad
This Shredded Vegetable and Soba Noodle Salad is a refreshing and healthy option for a quick meal. Packed with colorful vegetables and the satisfying chewiness of soba noodles, its dressed in a flavorful sesame-soy dressing that makes it irresistible.
Ingredients:
- 6 oz soba noodles
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1/2 cup thinly sliced red bell pepper
- 1/4 cup chopped fresh cilantro
- 2 tbsp toasted sesame seeds
- 1/4 cup chopped roasted peanuts
- For the dressing: 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp grated ginger
- 1 clove garlic, minced
Instructions:
Cook soba noodles according to package instructions, then rinse under cold water and drain
In a large bowl, combine shredded cabbage, carrots, cucumber, red bell pepper, and cilantro
Add the cooked soba noodles to the bowl and toss to combine
In a separate small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic to make the dressing
