Deviled Egg Potato Salad

This deviled egg potato salad is a tasty change from regular potato salad. It has the creamy texture of potato salad and the sour flavors of deviled eggs.

Ingredients:

  • 4 large potatoes, diced
  • 6 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped pickles
  • 1/4 cup chopped red onion
  • Salt and pepper to taste
  • Paprika for garnish

Instructions:

Boil the diced potatoes until tender, then drain and let cool

In a large bowl, mix together the chopped eggs, mayonnaise, mustard, apple cider vinegar, pickles, and red onion

Add the cooled diced potatoes to the bowl and gently stir to combine

Season with salt and pepper to taste

Refrigerate for at least 1 hour before serving

Sprinkle with paprika before serving as a garnish
