Best Instant-Pot Vegan Charro Beans
These Instant Pot Vegan Charro Beans are full of flavor from the spices and hearty vegetables that make them. Theyre a great dish for any occasion. Plus, using the Instant Pot cuts down on cooking time while still making the beans tender and tasty.
Ingredients:
- 1 cup dried pinto beans, soaked overnight
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 jalapeno, diced seeds removed for less heat
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 cup diced tomatoes
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Drain and rinse soaked beans
Set Instant Pot to saut mode, add olive oil, onion, garlic, and jalapeno
Saut until fragrant, about 2-3 minutes
Add drained beans, cumin, chili powder, smoked paprika, diced tomatoes, and vegetable broth to the Instant Pot
Stir well
Close the lid and set the Instant Pot to high pressure for 30 minutes
Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then carefully release any remaining pressure manually
Open the lid and stir the beans
Season with salt and pepper to taste
Serve hot, garnished with fresh cilantro
