Easy Chicken Florentine - Maebells

A delicious and creamy low-carb Chicken Florentine recipe thats quick and easy to make. Perfect for a satisfying keto-friendly dinner

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach leaves
  • 1 teaspoon Italian seasoning

Instructions:

Season chicken breasts with salt and pepper

Heat olive oil in a large skillet over medium heat

Add chicken breasts and cook until browned and cooked through, about 6-8 minutes per side

Remove from skillet and set aside

In the same skillet, add minced garlic and saut until fragrant, about 1 minute

Pour in chicken broth and scrape up any browned bits from the bottom of the skillet

Add heavy cream, Parmesan cheese, spinach, and Italian seasoning

Stir until spinach wilts and sauce thickens, about 3-4 minutes

Return chicken breasts to the skillet and spoon sauce over them

Simmer for an additional 2-3 minutes until everything is heated through

Serve hot, garnished with additional Parmesan cheese if desired
