Homemade Tim Tams
Ingredients:
- For the Cookies:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- For the Filling:
- 1/2 cup heavy cream
- 8 ounces dark chocolate, chopped
- 2 tablespoons unsalted butter
- 2 tablespoons corn syrup
- For the Chocolate Coating:
- 10 ounces milk chocolate, chopped
- 2 tablespoons vegetable oil
Instructions:
Mix the butter and sugar in a big bowl until the mixture is light and fluffy
Add the vanilla extract and mix well
Add the flour and cocoa powder one by one, and then mix just until its all mixed in
Make a rectangle shape out of each half of the dough
Put it in the fridge for at least an hour after wrapping it in plastic wrap
Set the oven to 350F 175C and heat it up
Put parchment paper on baking sheets
Make each rectangle of dough about 1/4-inch thick
Put the squares on the baking sheets that have been prepared
The cookies should be baked for 12 to 15 minutes, or until they feel firm
Set them on wire racks to cool all the way down
Set the heavy cream on low heat until it just starts to simmer
Take it off the heat and add the corn syrup, butter, and chopped dark chocolate
Mix everything together until its smooth and creamy
Wait for the filling to cool down and get thicker
Then, make sandwiches by putting a layer of the filling between two cookies that have already cooled
Lay the stuffed sandwiches out on a baking sheet lined with parchment paper
Freeze them for about 30 minutes
To make the chocolate coating, use a double boiler or the microwave to melt the vegetable oil and milk chocolate together
Coat each frozen sandwich all the way through with the melted chocolate
Allow any extra chocolate to fall to the ground
Back the chocolate-covered sandwiches to the sheet that has been lined with parchment paper and let the chocolate set
The chocolate coating will be set when the Tim Tams are ready to eat
