Keto Crock Pot Lasagna Soup

This Keto Crock Pot Lasagna Soup tastes just like regular lasagna, but it doesnt have any carbs. Its simple to make in a slow cooker and makes for a warm and cozy meal.

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can 14 oz diced tomatoes
  • 1 can 14 oz crushed tomatoes
  • 4 cups beef broth
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup sliced zucchini
  • 1 cup sliced mushrooms
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish optional

Instructions:

In a skillet over medium heat, brown the ground beef with diced onion and minced garlic until cooked through

Drain excess fat

Transfer the cooked beef mixture to a crock pot

Add diced tomatoes, crushed tomatoes, beef broth, Italian seasoning, salt, and pepper to the crock pot

Stir to combine

Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours

In the last 30 minutes of cooking, add sliced zucchini and mushrooms to the crock pot

Once done, ladle the soup into bowls

Top with shredded mozzarella and grated Parmesan cheese

Garnish with fresh basil leaves if desired

Serve hot and enjoy
