Scallop, Orange, and Cucumber Kebabs

These succulent scallop kebabs with refreshing orange and cucumber make for a delightful barbecue treat. The citrusy marinade adds a burst of flavor, complementing the sweetness of scallops perfectly. Its an easy and elegant dish thats sure to impress your guests at any barbecue gathering.

Ingredients:

  • 12 large scallops, cleaned
  • 2 oranges, peeled and segmented
  • 1 cucumber, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions:

In a bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper to make the marinade

Thread scallops, orange segments, and cucumber slices onto the soaked skewers, alternating between each ingredient

Place the kebabs in a shallow dish and pour the marinade over them, ensuring they are well-coated

Cover and refrigerate for at least 30 minutes to marinate

Preheat the grill to medium-high heat

Remove the kebabs from the marinade and discard any excess marinade

Grill the kebabs for 2-3 minutes per side, or until the scallops are cooked through and lightly browned

Serve hot, garnished with additional lemon slices if desired
