Skinny Pumpkin Pasta Bake
With this Skinny Pumpkin Pasta Bake, you can enjoy the creamy goodness of pumpkin. A healthier take on a classic comfort food, this pasta dish has the rich flavors of pumpkin and cheese mixed together.
Ingredients:
- 8 oz whole wheat pasta
- 1 cup pumpkin puree
- 1 cup low-fat milk
- 1/2 cup grated Parmesan cheese
- 1/4 cup low-fat cream cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley optional
Instructions:
Warm the oven up to 190C 375F
As directed on the package, cook the pasta
Once done, drain it and set it aside
Put pumpkin puree, low-fat milk, Parmesan cheese, cream cheese, garlic powder, onion powder, nutmeg, salt, and pepper in a saucepan
Melt the cheeses and make the mixture smooth over medium heat
Add the cooked pasta to the pot and mix it around until its all covered
Put the pasta mix in a baking dish and top it with mozzarella cheese
Bake for twenty to twenty-five minutes, or until the cheese melts and bubbles
If you want, you can add chopped parsley as a garnish before serving
