Beef Enchilada Casserole
Ingredients:
- 1 pound ground beef
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 can 15 ounces black beans, drained and rinsed
- 1 can 10 ounces red enchilada sauce
- 1 can 4 ounces diced green chilies
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 small corn tortillas
- Salt and pepper to taste
- Chopped fresh cilantro, for garnish
Instructions:
Preheat your oven to 375F 190C
In a large skillet, cook the ground beef over medium-high heat until browned, breaking it apart as it cooks
Drain any excess fat
Add the diced onion and red bell pepper to the skillet with the cooked beef
Cook for about 5 minutes, or until the vegetables are softened
Stir in the black beans, diced green chilies, and half of the enchilada sauce
Cook for another 2-3 minutes until heated through
Season with salt and pepper to taste
In a 9x13-inch baking dish, spread a thin layer of the remaining enchilada sauce
Place a layer of corn tortillas on top of the sauce, followed by a portion of the beef mixture and a sprinkle of both shredded cheeses
Repeat the layers until all ingredients are used, finishing with a layer of cheese on top
Bake in the preheated oven for 20-25 minutes, or until the casserole is hot and bubbly, and the cheese is melted and lightly browned
Garnish with chopped fresh cilantro before serving
Serve hot and enjoy
