Rainbow Cupcakes for Two
Ingredients:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/8 teaspoon salt
- 2 tablespoons unsalted butter, softened
- 1/4 cup buttermilk
- 1/2 teaspoon vanilla extract
- 1 egg white
- Food coloring red, orange, yellow, green, blue, purple
- 1/4 cup rainbow sprinkles
Instructions:
Warm your oven up to 350F 175C and put paper liners in two cupcake molds
Whisk the flour, sugar, baking powder, baking soda, and salt together in a small bowl
Melt the butter and mix it with the buttermilk and vanilla extract in a different bowl until the mixture is smooth
Add the dry ingredients to the wet ones one at a time and mix just until everything is combined
Pour the batter into six small bowls
In each bowl, add a few drops of food coloring to make a rainbow of colors
Each one should be mixed well
In the bottom of each cupcake liner, start with one color and spoon a little batter in
Stack the colors in the same cup until all the batter is gone, which will make a rainbow effect
Each cupcake should have rainbow sprinkles on top of it
After the oven is hot, bake the cupcakes for 15 to 18 minutes, or until a toothpick stuck in the middle comes out clean
After taking the cupcakes out of the oven, let them cool in the pan for a few minutes
Then, move them to a wire rack to finish cooling
Once the cupcakes are cool, you can frost them with your favorite frosting and add more decorations if you want to
