This recipe for sizzling iron chicken shows how versatile cast-iron skillets are and how well they distribute heat. The skillet keeps the juices and flavors inside, so the chicken breasts are tender and the peppers and onions look beautiful.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons chopped fresh parsley

Instructions:

Warm the oven up to 190C 375F

Salt, pepper, paprika, garlic powder, and thyme should all be used to season chicken breasts

Spread olive oil in a cast-iron skillet and heat it over medium-high heat

For 3 to 4 minutes on each side, sear the chicken breasts until they turn golden brown

Take the chicken out of the pan and set it aside

Put the onion, garlic, and bell peppers in the same pan

It will take about 5 minutes of sauting until the vegetables are soft

Put in the chicken broth and raise the heat

Place the chicken breasts back in the skillet, nestling them into the vegetable mix

Put the skillet in an oven that has already been heated up and bake for 20 to 25 minutes, or until the chicken is fully cooked

Add chopped parsley as a garnish before serving
