Creamy Vegan Salad Dressing

Healthy foods like cashews and nutritional yeast are used to make this easy and creamy vegan salad dressing. It has a rich and tangy flavor that goes well with any salad. It only takes a few minutes to make and makes your greens taste even better.

Ingredients:

  • 1/2 cup raw cashews, soaked in water for 4 hours or overnight
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh chopped parsley

Instructions:

Drain and rinse the soaked cashews

In a blender, combine cashews, water, lemon juice, Dijon mustard, garlic, nutritional yeast, salt, and black pepper

Blend until smooth and creamy, scraping down the sides as needed

Transfer the dressing to a bowl and stir in chopped parsley

Taste and adjust seasoning if necessary

Serve immediately over your favorite salad
