Keto Stuffed Poblano Chiles
Ingredients:
- 4 large poblano chiles
- 1 lb ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 cup shredded cheese cheddar or Monterey Jack
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions:
Get the oven ready by heating it up to 400F 200C
Make a cut down the middle of each poblano pepper and take out the seeds and membranes
Put olive oil in a pan and heat it over medium-low heat
Put in the garlic and onions, and cook them until they become clear
Break up the ground beef with a spoon as you add it to the pan and cook it until it turns brown
To finish cooking, add the chopped cilantro and diced tomatoes
Take the pan off the heat and add half of the shredded cheese
Put the beef mixture inside each poblano pepper and then put them in a baking dish
Cover the stuffed chiles with the rest of the cheese
For 20 to 25 minutes, or until the chiles are soft and the cheese is melted and bubbly, bake in an oven that has already been heated
