Mushroom Welsh Rarebit Toastie with Fried Egg
Ingredients:
- 2 large flat mushrooms, sliced
- 1 tbsp olive oil
- 4 slices sourdough bread
- 200g mature cheddar, grated
- 1 tbsp Dijon mustard
- 2 tbsp Worcestershire sauce
- 2 tbsp stout or beer
- 2 large eggs
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Warm up the grill over medium-high heat
Put olive oil in a pan and heat it over medium-low heat
After you add the mushrooms, cook for about 5 to 6 minutes, until they are golden brown and soft
Add pepper and salt to taste
Grated cheddar, Dijon mustard, Worcestershire sauce, and stout or beer should all be mixed together well in a bowl
Put slices of sourdough bread on a baking sheet
Cover two slices of bread with the cooked mushrooms
Put some of the cheese mix on top of the mushrooms
Put it under the grill for three to four minutes, or until the cheese is melted and golden brown
In a different pan, cook the eggs until they are done the way you like them
Take the toasties off the grill when the cheese is melted and golden
Put a fried egg on top of each toastie
Add chopped fresh parsley as a garnish and serve right away
