Peanut Butter Surprise Chocolate Cupcakes
Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup water
- 1/3 cup vegetable oil
- 1 tsp white vinegar
- 1 tsp vanilla extract
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar
- 12 chocolate peanut butter cups miniature
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- Crushed peanuts optional, for garnish
Instructions:
Start by heating the oven to 350F 175C
You can line a muffin tin with cupcake liners
There is a lot of stuff in this bowl, so use a whisk to mix the flour, sugar, cocoa powder, baking soda, and salt
Gather the dry ingredients together and add the water, vegetable oil, vinegar, and vanilla extract
Mix the batter well and until it is smooth
Up to about two thirds of the way full, fill each cupcake liner with batter
Put the powdered sugar and creamy peanut butter in a different bowl and mix them together until they form a thick paste
In the middle of each cupcake, put a small chocolate peanut butter cup and press it down a little
Put a small amount of the peanut butter paste mixture on top of each peanut butter cup so that it covers the whole chocolate cup
Place the cupcakes in an oven that has already been heated
Bake for 18 to 20 minutes, or until a toothpick inserted into the chocolate part of the cupcake comes out clean
After taking the cupcakes out of the oven, let them cool in the muffin tin for a few minutes
Then, move them to a wire rack to cool all the way down
Heat the heavy cream in a bowl that can go in the microwave until its hot but not boiling
While the cupcakes cool, make the chocolate ganache
Pour it over the chocolate chips
Wait one minute, then stir it around until its smooth and shiny
Once the cupcakes are completely cool, drizzle them with chocolate ganache and, if you want, top them with peanuts that have been crushed
Serve and have fun
